
A rustic meal perfect for cold winter nights
Lamb shanks are far from the fiddly, difficult to cook meal that you imagine when you see them on a restaurant menu. Don’t get me wrong, they take a long time – hours in fact – to cook, but that just means you have time to spend with your guests when serving them at home.
Lamb shank (or foreshank) is full of muscle as it comes from the shoulder and front leg of the sheep. For this reason it needs to be cooked on a low heat for a long time to make sure it’s tender, and if you cook it in a slow cooker you will find it’s so tender the meat falls apart when you touch it – perfection!
The exposed bone makes this look like a very rustic meal, so don’t worry if your onions are chopped finely or your mash isn’t as fluffy as you’d like! Continue reading →
